Anyone who has ever seen Friends knows that Monica Geller is an excellent chef, and now Courteney Cox is channelling her Friends character by putting together some delicious food creations.

Followers of the actor’s Instagram page have already seen videos of her rustling up sugar-free banana bread, and a spicy chicken curry, and now the real-life Monica has come up with gluten-free biscotti that she has called the “easiest recipe in the world”. That is very much our kind of recipe! 

The caption to the video reads: “I don't know what happened to me but I got real serious about these biscottis”.

The video, which is soundtracked by her mate Ed Sheeran, shows the process that Courteney goes through to make the biscotti, and it does indeed look pretty straightforward.

You’ll need: 

  • Three cups and two tablespoons of flour (two cups + one tablespoon of gluten-free flour, and one cup + one tablespoon of almond flour)

  • One cup of cane sugar

  • One cup vegetable oil

  • Really good chocolate chips (about ¾ of a bag)

  • One teaspoon baking soda

  • One tablespoon of vanilla (I use the Madagascar vanilla bean syrup)

  • Three eggs

  • Two-three shakes of course sea salt

  • Half-a-cup of sugar and one teaspoon of cinnamon to sprinkle on top before baking

To make the biscotti, Courteney preheats the oven to 350, and mixes all the ingredients in a bowl. She takes a rectangular baking sheet with a lip and makes three loaves (3" wide) using the width of the pan. She sprinkles cinnamon-sugar mixture over the top.

She then puts them in the oven for about 20 minutes or until the cookies are golden brown. Then she takes them out of the oven, lets them cool for five minutes and then cuts the cookies on an angle.

Courteney then places them on their sides and puts them back into the oven for 10 minutes. Alternatively you can do so for 5 minutes and then turn off the oven and let them stay for as long as you can leave them. The Friends actor says: “This is the way I do [them] and I find that the cookies are super crispy.”

And voila! You’ve got yourself some delicious, gluten free, biscotti, all thanks to Monica Geller… sorry, we mean Courteney Cox!
