Celebrity chef explains why eggs should 'never be put in the fridge'

Never put all your eggs in one basket. Or in the fridge, says top TV chef James Martin. And the reason to keep them out of the refrigerator isn't just about temperature, it's about flavour.

The former Saturday Kitchen presenter has explained that eggs take on other odours and flavours of food in the fridge which can change the taste of both eggs and the other products.

He previously told ITV's This Morning: "All eggs are porous - that’s why you don’t put them in the fridge by the way [because] they absorb all the flavours from the fridge.

"If you have truffle for instance, in the restaurant we put that in a bowl with rice and put the eggs on the top and cling film it and leave it overnight.

"When you break the eggs in the morning for breakfast for customers, [you get] truffle scrambled eggs but there’s no truffle in it."

While many people keep their eggs in fridge doors, this can 'subject them to fluctuations in temperature every time you open your fridge, which could encourage bacterial growth and impair the eggs’ protective membranes', advised Healthline.

If you do keep them in the fridge, keep them on a shelf near the back in their carton and well away from strong flavoured foods, like onions, in airtight containers.

However, keeping eggs in the fridge will keep them fresher for much longer than storing them at room temperature.
